Zuchinni Bread

Ingredients
- 3 cups shredded zucchini
- 2 cups sugar
- 1 cup oil
- 3 eggs
- 1 tablespoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 3 3/4 cups flour
- 1 cup walnuts (optional)
Directions
- Preheat oven to 325.
- Grease two regular size bread pans.
- Sift together the dry ingredients.
- Stir together the wet ingredients in a large bowl.
- Add the dry and blend just until moisten.
- Divide batter into the two pans and bake 1 to 1 1/4 hour or until a toothpick stuck in the center comes out clean.
