Zuchinni Bread

Ingredients

  • 3 cups shredded zucchini
  • 2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 3 3/4 cups flour
  • 1 cup walnuts (optional)


Directions

  • Preheat oven to 325.
  • Grease two regular size bread pans.
  • Sift together the dry ingredients.
  • Stir together the wet ingredients in a large bowl.
  • Add the dry and blend just until moisten.
  • Divide batter into the two pans and bake 1 to 1 1/4 hour or until a toothpick stuck in the center comes out clean.
