Salmon Patties

Ingredients

  • 15 ounce can of salmon (drained)
  • 1 tube of saltine crackers (1/4 box)
  • 1 teaspoon dillweed
  • 1/4 teaspoon black pepper
  • 1 egg


Directions

  • Mash it all together thoroughly (including that whole tube of crackers!)
  • Shape into 6 patties.
  • Fry in non-stick pan with just a hint of oil.
  • Heat through, turning once to brown on both sides (about 5 minutes per side.)
  • Serve with secret sauce (1 cup low-fat mayo, 1 teaspoon regular yellow mustard, 1 teaspoon dillweed)

Homemaking Tip

  • This is a great pantry meal: easy to keep on hand and can be made without the egg in an emergency.
