Potato Pancakes

Ingredients
- 1 egg
- 1/2 small onion
- 1 teaspoon salt
- 1/4 cup flour
- 2 cups cubed raw potato
- 1/4 teaspoon baking powder
Directions
- Whirl everything in the blender!
- Pour into hot heavy skillet coated with oil.
- Fry until brown on both sides (about three minutes each side)
- Remove, place on cookie sheet covered with paper towels. Keep warm in the oven.
- Serve with apple sauce and sour cream! Yummy!
