Potato Pancakes

Ingredients

  • 1 egg
  • 1/2 small onion
  • 1 teaspoon salt
  • 1/4 cup flour
  • 2 cups cubed raw potato
  • 1/4 teaspoon baking powder


Directions

  • Whirl everything in the blender!
  • Pour into hot heavy skillet coated with oil.
  • Fry until brown on both sides (about three minutes each side)
  • Remove, place on cookie sheet covered with paper towels. Keep warm in the oven.
  • Serve with apple sauce and sour cream! Yummy!
