Mock-amole
From the Kitchen of Cheryl Qualls
Ingredients 12 servings @ 2 points per serving (dip only)
- 2 ripe avocados
- 1/2 cup canned asparagus
- 1 cup canned white beans, drained and rinsed
- 2 cloves garlic
- 1 T fresh lime juice
Directions
- Whirl all of the above in a food processor or blender and serve with baked tortilla chips (you have to count those points too!) or serve with celery sticks or wedges of colored sweet peppers to use as scoops.
