Julia's Skillet Pizza

From the Kitchen of Julia T.

My dearest friend served this casserole to me this week while I was at her home visiting and it was so wonderful and so easy! Enjoy!

Ingredients

  • 1 pound of lean ground beef
  • 1/2 cup chopped onion
  • 1 clove of garlic, minced
  • 1/2 cup green pepper, diced
  • 1 cup sliced mushrooms
  • 1/4 cup sliced black olives
  • 1/2 pound of angel hair pasta
  • 1-28oz can of diced tomatoes w/liquid
  • 1-4 oz can pizza sauce
  • 1/2 cup part skim mozzerella cheese, shredded

Directions

  • In a 10 inch non-stick skillet, brown the beef along with the onions, garlic, and green peppers. Drain away any grease and return it to the skillet.
  • Arrange the uncooked angel hair pasta over the beef in all directions in a thin layer.
  • On top of that dump the remaining ingredients (like you're making a pizza)
  • Cover and simmer 8-10 minutes or until the pasta is tender.
  • Top with the cheese and cover another minute or two to melt.
  • You can serve this sliced in thick wedges. Yummy!
  • If you like different toppings on your "pizza" go ahead and change this up. You can use a mixture of cheeses and you may use additional spices if you like a more robust flavor.
