Honey Mustard-Coated Chicken

Ingredients

  • 1/4 c. Dijon Mustard
  • 3 T honey
  • 2 t. lemon juice
  • 1 cup plain bread crumbs
  • 6 boneless, skinless chicken breast half
  • 1 T vegetable oil


Directions

  1. Heat oven to 375. Lightly grease a 15x10x1 jelly roll pan.
  2. Combine mustard, honey, and lemon juice in a shallow dish.
  3. Dip chicken in the mustard mix, turning to coat both sides. Dredge in bread crumbs to cover completely.
  4. Place in prepared pan and drizzle oil over evenly (or give it a blast of "pam")
  5. Bake at 375 for 20 to 22 minutes (until done).
