Honey Mustard-Coated Chicken

Ingredients
- 1/4 c. Dijon Mustard
- 3 T honey
- 2 t. lemon juice
- 1 cup plain bread crumbs
- 6 boneless, skinless chicken breast half
- 1 T vegetable oil
Directions
- Heat oven to 375. Lightly grease a 15x10x1 jelly roll pan.
- Combine mustard, honey, and lemon juice in a shallow dish.
- Dip chicken in the mustard mix, turning to coat both sides. Dredge in bread crumbs to cover completely.
- Place in prepared pan and drizzle oil over evenly (or give it a blast of "pam")
- Bake at 375 for 20 to 22 minutes (until done).
