Crock Pot Pepper Steak

Ingredients
- 2 pounds stewing beef
- 2 cans diced tomatoes (Don't drain. I use one can with onions and garlic and one can with mild green chilis -- Meijer house brand.)
- 1/2 cup soy sauce (OK to use low sodium if you want)
- 2 teaspoons sugar
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground ginger (dry as in spice section, not fresh from produce section)
- 2 large green peppers (cored and sliced)
- 1/4 cup corn starch
Directions
- Toss everything in the crock pot except the sliced green peppers and corn starch.
- Cook all day on low.
- One hour before dinner stir in green peppers.
- Half hour before dinner stir in one quarter cup corn starch dissolved in one cup cold water.
- Serve over hot rice.
- In my house this serves six. Your house may differ!
