Crock Pot Pepper Steak

Ingredients

  • 2 pounds stewing beef
  • 2 cans diced tomatoes (Don't drain. I use one can with onions and garlic and one can with mild green chilis -- Meijer house brand.)
  • 1/2 cup soy sauce (OK to use low sodium if you want)
  • 2 teaspoons sugar
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground ginger (dry as in spice section, not fresh from produce section)
  • 2 large green peppers (cored and sliced)
  • 1/4 cup corn starch


Directions

  • Toss everything in the crock pot except the sliced green peppers and corn starch.
  • Cook all day on low.
  • One hour before dinner stir in green peppers.
  • Half hour before dinner stir in one quarter cup corn starch dissolved in one cup cold water.
  • Serve over hot rice.
  • In my house this serves six. Your house may differ!
