Cranberry-Nut Turkey Salad

Ingredients

Serves 4 with 5 points per serving
  • 1 pound boneless, skinless turkey breast (or chicken), cooked, cut in 1/2-in cubes.
  • 1/3 cup fat-free mayonnaise
  • 1/4 cup low-fat plain yogurt
  • 1/4 cup scallions, chopped
  • 1/4 cup chopped walnuts, toasted
  • 2 Tablespoons dried cranberries (I chop these up a little)
  • 1 Tablespoon Dijon mustart
  • 1/8 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste
  • 4 cups romain lettuce, torn


Directions

  • Combine all ingredients, except lettuce, in a medium bowl; mix well and serve over lettuce.
  • Yields about 1 1/2 cups per serving. (You can also serve this as "lettuce wraps" by replacing the romain lettuce with the whole leaves of bibb lettuce. Very pretty.)
