CQ's Party Chicken Salad

Ingredients

  • Cooked White Meat Chicken, hand torn into small chunks (2 cups or so)
  • Seedless red grapes, cut in half (about 1 cup)
  • Broken pecan pieces (about 1/2 cup)
  • 1 Tablespoon of fresh dill or 1/2 teaspoon dillweed (or to taste)
  • Enough low-fat mayo to moisten the salad and make it spreadable (about 1/2 cup)
  • Salt to taste.


Homemaking Tip

  • If you are going to be making little party sandwiches, chop the chicken in your food processor briefly to cut it into very small pieces. This makes a very smooth, spreadable salad. Cut up the grapes and pecans too so the "scale" matches. Great stuffed into mini-pitas (Trader Joes or Meijer in Deli) or on party sized breads.
