Chicken Parmigiana Sandwich

Ingredients
Yields 4 sandwiches @ 6 points each
- 1/4 cup fat free Italian salad dressing
- 1/3 cup seasoned bread crumbs
- 1 pound boneless, skinless, chicken breast in 4-4oz pieces
- 1/2 cup canned tomato sauce
- 1/4 cup part skim mozzarella, shredded
- 8 slices reduced calorie bread, Italian style, toasted
Directions
- Preheat oven to 400.
- Coat a baking sheet with cooking spray.
Place Italian dressing in a shallow bowl. Place bread crumbs in a separate shallow bowl. Dip each piece of chicken first in the salad dressing and then coat with bread crumbs. Place on the baking sheet and bake 15 minutes.
- Top each piece of chicken with some of the tomato sauce and 1/4 of the cheese. Bake another 10 minutes.
- Serve each chicken breast with two slices of toasted bread to make the sandwich. (You can dress up the sandwiches with lettuce and other vegetables without changing the points value.)
