Cheesy Pasta and Vegetables

Ingredients

  • 1 pound of cavatappi or other corkscrew shapped pasta
  • 1 T olive oil
  • 1 1/2 # boneless skinless chicken breasts cut into 1" chunks
  • 1 - 12oz bag of mixed fresh veggies like "Mann's" brocoli,carrot,pea pods mix
  • 1 pint cherry tomato halved
  • 1 tub of low-fat soft spreadable herb cheese (flavored cream cheese)
  • 1/4 t. salt and pepper


Directions

  • Heat a large pot of lightly salted water to boiling. Add pasta and bring back to boil. Cook 6 minutes.
  • Meanwhile, heat a large nonstick skillet over medium-heat. Add olive oil and tilt pan to coat. Add chicken. Cook 6 minutes, stirring occasionally. During last minute of cooking add yellow pepper to skillet. Remove from heat.
  • Once pasta has cooked for six minutes, add the other fresh veggies. cook 2 minutes then drain. (save 1/4 cup of the hot water)
  • In a large bowl, toss together hot pasta and veggies, chicken and pepper, tomatoes, herbed cheese, reserved pasta water, salt and pepper until well blended and cheese is melted.
  • Serve with grated parmesan if desired. Serves 6.
