Buttermilk Biscuit Sticks

Ingredients
- 2 cups all-purpose flour
- 2 T sugar
- 2 teaspoon baking powder
- 2 teaspoons finely shredded lemon peel
- 2 teaspoons snipped fresh tarragon or 1/2 teaspoons dried tarragon, crushed
- 1/4 teaspoon baking soda
- 1/4 cup butter
- 1 beaten egg
- 1/2 cup buttermilk (and a little extra for brushing)
- poppy seed (optional)
Directions
- Preheat oven to 425.
- In a medium mixing bowl stir together flour, sugar, baking powder, lemon peel, tarragon, and baking soda. Using a pastry blender, cut in butter until mixture resembles coarse crumbs.
- Make a well in center of mixture. Add egg and 1/2 cup buttermilk all at once. Using a fork, stir until moistened.
- Turn dough out onto a lightly floured surface. Quickly knead dough 10 to 12 strokes or until dough is nearly smooth. Lightly roll dough into 12 6-inch strips.
- Place strips 1/2 inch apart on a lightly greased baking sheet. Brush with additional buttermilk. If desired, sprinkle with poppy seed. Bake for 10 minutes or until buttermilk sticks are golden.
- Cool slightly. Serve warm. Makes 12 sticks. 61 calories per stick with 2 grams of total fat.
