Banana Bread

Ingredients

  • 1 3/4 cup all-purpose flour
  • 2/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup shortening
  • 1 cup ripe bananas, mashed
  • 2 eggs, beaten


Directions

  • Mix all dry ingredients.
  • Cut in shortening.
  • Mix wet ingredients together in separate bowl.
  • Combine wet and dry ingredients all at once, stir just till blended.
  • Pour into greased and floured 9x5 bread pan.
  • Bake at 350 degrees for 50 minutes or until a toothpick in the center comes out clean.
  • Recipe can be doubled (my husband prefers this option.)

Homemaking Tip

  • Freezes well after bread is completely cooled. Wrap it once in waxed paper or plastic wrap, and again with aluminum foil. Will keep in freezer for 3 months (but only if husband is out of town.)
