Banana Bread

Ingredients
- 1 3/4 cup all-purpose flour
- 2/3 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup shortening
- 1 cup ripe bananas, mashed
- 2 eggs, beaten
Directions
- Mix all dry ingredients.
- Cut in shortening.
- Mix wet ingredients together in separate bowl.
- Combine wet and dry ingredients all at once, stir just till blended.
- Pour into greased and floured 9x5 bread pan.
- Bake at 350 degrees for 50 minutes or until a toothpick in the center comes out clean.
- Recipe can be doubled (my husband prefers this option.)
Homemaking Tip
- Freezes well after bread is completely cooled.
Wrap it once in waxed paper or plastic wrap, and again with aluminum foil.
Will keep in freezer for 3 months (but only if husband is out of town.)
